At Aumont (formerly known as Ichishima Sake Brewery), traditional sake-making is deeply respected, but this does not mean that it cannot be improved. Not only rice, water, and the natural environment are valued, but technology too is equally a key factor to obtain a truly local sake of outstanding quality. The rice (Gohyakumangoku and Koshitanrei varieties) used is all farmed in Niigata prefecture, and the soft water is sourced from the Kaji river. Aumont is also the first brewery where a woman, Ms Kazuko Shiiya, managed to become a first-grade licensed sake maker.
