The Hanaomoi variety of rice is a high quality one, and is highly praised amongst Aomori prefecture brewers. Polishing it to 50% unexpectedly brings out all its umami and rich features, making this a full-bodied sake.
TYPE: Junmai daiginjo sake
COLOUR: Clear pale lemon green
OUR TASTING NOTES: Pronounced aromas of lavender, hibiscus flower, star anise and melon. Medium-bodied sake with rich viscosity and creamy mouth-coating texture, followed by a lingering layered finish. A rich rice umami-ness comes through when enjoyed at room temperature.
FOOD PAIRING: Mussels with white wine sauce; hotate bataa (scallops cooked in a butter, sake, and soy sauce); baked stuffed tomatoes.
SERVING SUGGESTIONS: Serve chilled (8-12 ºC) or at room temperature
