Hirairokuemon Yusan
A junmai made with Ginotome rice from Iwate prefecture and a combination of two yeasts, then fermented at low temperatures. On the palate, a mellow flavour blends with a certain acidity and lingering rice umami. This sake is not not too sweet and is met with a neat clean finish.
TYPE: Junmai ginjo unfiltered (muroka) undiluted sake (genshu)
COLOUR: Clear pale lemon green
OUR TASTING NOTES: On the nose, forest-y notes of wild strawberry, pine cones, and blackberries. On the palate, gentle acidity and rounded texture, followed by a complex finish with umami and astringency.
FOOD PAIRING: Green curry; pan fried scallops; avocado on toast with poached egg.
SERVING SUGGESTIONS: Serve well chilled (4-8 ºC)
STORAGE: Store in a dry and cool place. Avoid direct sunlight.
