The brewery was the first one in Yamagata prefecture to carry out their own milling for dozens of rice varieties, giving them more freedom to choose their line-up of sake and to create original flavour profiles. Moreover, the cold climate of the region allows for a low temperature fermentation which provides the sake with intense aroma and depth of taste.
