Wakatsuru Shuzo uses local rice of the Oyamanishiki variety, and Yamadanishiki rice from Hyogo prefecture; their water is sourced from an underground stream of the Shogawa river. Their current style of sake is a very intriguing hybrid of the rich Nanbu and the lighter Echigo styles. This particular approach was developed by the current head brewer (toji), who witnessed the 35-year long stimulating competition between the two previous toji, each brewing with either of the two styles. Wakatsuru also owns a distillery, Wakatsuru Saburomaru, which started producing whisky in 1952.
