A sake from the Hojobetsu series, produced with rice from the area of Agewa Shinden, which faces the sea and is surrounded by mountains. The crop easily faces sea water damage, but Mr Uesugi takes care of it wonderfully, saving the crop every year.
TYPE: Junmai sake
COLOUR: Pale lemon
OUR TASTING NOTES: Aroma of melon sorbet and green pear, with a hint of vanilla. On the palate, a pronounced and tingling acidity with fruity notes of kiwi and peppercorn finish. Deliciously well-balanced sake.
FOOD PAIRING: Grilled sea bass; sakura-ebi gohan (rice cooked with tiny shrimps); roasted vegetables seasoned with black pepper. The brewers recommend pairing it with seafood, since the rice to brew it was grown so close to the sea.
SERVING SUGGESTIONS: Serve chilled (8-12 ºC)
STORAGE: Store in a dry and cool place. Avoid direct sunlight.
