HIRAIZUMI Hiten YAMADORI
A sake brewed with Misatonishiki rice grown in the Ogata village (Akita prefecture), and using the Kyokai 1401 yeast (isoamyl acetate family), which is suitable for lengthy ageing periods. Its aroma is intense, yet neither too overpowering nor too subtle. The slow ageing process at a low temperature gives a well-rounded flavour, whilst the soft acidity typical of a yamahai makes it a sophisticated drink. The name Yamadori is taken from the official bird of Akita prefecture (copper pheasant).

COLOUR: Clear pale lemon green
OUR TASTING NOTES: Creamy aromas of quince, young pear and white flowers. This yamahai sake has a pronounced acidity with notes of pomelo fruits, peach yoghurt, and a complex spicy finish.
FOOD PAIRING: Sweet & sour prawns (ebi chiri); grilled duck with orange sauce; deep fried courgette flowers stuffed with ricotta cheese.
SERVING SUGGESTIONS: Serve chilled (8-12 ºC), at room temperature, or warmed up.
STORAGE: Store in a dry and cool place. Avoid direct sunlight.
