Tombo Label Juku SWE
A junmai that has been made with the traditional kimotozukuri (or kimoto) method, which involves the use of ambient lactic acid bacilli for the fermentation starter and human labour to mix rice and koji with a pole, then aged at low temperatures for four years. The ageing process gives it a mild aroma and adds roundness to the intense flavour, while umami and sweetness spread all around the palate. Best enjoyed chilled.

OUR TASTING NOTES: Bold sake with rich aroma with umami notes of soy sauce, hay, and mushroom. Smooth texture with subtle sweetness, outstanding acidity and umami harmonising well together. When warmed up, coffee notes add to the umami flavours on the nose and tiramisu flavour on the palate.
FOOD PAIRING: Sukiyaki; honey glazed pork belly; french onion soup.
SERVING SUGGESTIONS: Enjoy at room temperature or warmed up (45-50 ºC)
