Premium sake made with rice, koji, water, yeast, and a very small amount of distilled alcohol. The rice is polished (or milled) to at least 61% and to no more than 70% of its original size. The addition of alcohol in the brewing process attenuates the acidity and umami notes, while adding a cleaner and crispier dryness.
