Japanese: 純米 or 純米酒

Premium “pure” (jun) sake, made only with rice, koji, yeast, and water. There is no fixed requirement for the rice polishing ratio, but the grains are reduced to no less than 61% of their original size. This gives the sake a fuller body and a more complex flavour profile, with higher acidity and umami which make it very easy to pair it with food.
