Takizawa produces hand-crafted “traditional sake that has an intense aroma, like a chrysanthemum, and is pure like spring  water”. The rice for their ginjo and daiginjo graded sake is carefully hand-washed, and only traditional tools are used to brew it, including a “koji box” (koji-bako) to make koji. Takizawa uses water from an underground stream running from the Arakawa river that is rich in minerals, ideal for feature for the fermentation.
