1984, The Bitter Sweet Symphony
A kijoshu brewed in 1984 and aged until 2016, when the brewers launched a crowdfunding campaign to make this bottle possible. An extremely dark, almost black aged sake in which the characteristic sweetness of kijoshu has almost completely faded. Its intense aroma reminds of fragrant Western-style liqueurs. The name was inspired by the song “The Bitter Sweet Symphony“ by The Verve.

COLOUR: Deep brown
OUR TASTING NOTES: On the nose, unique aromas of balsamic vinegar, soy sauce, pu erh tea, kombu dashi and piccalilli. A burst of flavours upon first sip, with ponzu sauce, shaoxing wine, bold umami notes and a touch of sweetness of caramelised onions. This one-of-a-kind experimental sake will be sure to push your boundaries!
FOOD PAIRING: Matured cheese board; gyoza; tempura; ceviche; Eton mess.
SERVING SUGGESTIONS: This incredibly versatile sake can be enjoyed with a meal or on its own. Though we recommend it well chilled (4-8 ºC), it encourages experimentation. It can also be great for savoury cocktails (Bloody Mary, Red Snapper, …).
