An unpasteurised junmai ginjo with an incredibly intense acidity. Uniquely brewed to emulate the characteristics of a red wine. This sake was brewed with black koji, usually used for shochu.

COLOUR: Pale lemon
OUR TASTING NOTES: Lactic and cereal nose with hazelnut and walnut skin notes and a touch of stone fruits. Same nutty and lactic notes on the palate, with hints of mushroom and soy sauce. Its nutty notes and orange finish remind of a Valpolicella.
FOOD PAIRING: Grilled duck with orange sauce; sausage and mash; grilled eel (kabayaki).
SERVING SUGGESTIONS: Serve chilled (8-12 ºC)
