An unpasteurised junmai ginjo with refreshing acidity. Uniquely brewed to emulate the characteristics of a white wine. This sake was brewed with white koji, usually used for shochu.

COLOUR: Pale lemon
OUR TASTING NOTES: Pungent white wine-like nose, with more fruity notes gradually coming through. On the palate, high acidity and medium sweetness, with hints of lychee and apple vinaigrette. Highly acidic and sweet like a Gewürztraminer wine.
FOOD PAIRING: Grilled wild poultry; lobster with burned butter sauce; kakuni (glazed pork belly); kamo-nanban soba (stewed duck with buckwheat noodles).
SERVING SUGGESTIONS: Serve chilled (8-12 ºC)
