This sake is brewed in the kijoshu style, which replaces some of the water used in the sake making process with additional sake. It has also undergone five years of cold ageing. The result is a rich flavour of concentrated umami and sweetness, reminiscent of muskmelon.
TYPE: Kijoshu sake
COLOUR: Clear pale lemon green
OUR TASTING NOTES: Sweet aromas of condensed milk, baked apple pie and honey. Richly sweet on the palate, with flavours of marron glace and ripe melon puree.
FOOD PAIRING: Dark chocolate; chestnut pies. The brewers recommend pairing it also with cheese, foie gras, and ice-cream.
SERVING SUGGESTIONS: Serve well chilled (4-8 ºC)
STORAGE: Store in a dry and cool place. Avoid direct sunlight.
