One of Miyoshikiku’s three special releases for MIRAI SAKE INTERNATIONAL.

An experimental sake made using wine yeast (RX16) and the yamahai technique, a traditional way of producing the fermentation starter using ambient lactic acid bacilli. The character on the label is Doronjo, from the 1970s anime “Yatterman”.

TYPE: Yamahai junmai sake

COLOUR: Pale lemon

OUR TASTING NOTES: Cheesy and earthy nose, with sweet soy sauce and sultanas notes. It has all the rich and funky characteristics of a yamahai sake, including high acidity and intense sweetness.

FOOD PAIRING: Matured and strong cheese; liver yakitori (chicken skewers). The brewers recommend pairing it with meat-based dishes.

SERVING SUGGESTIONS: Serve chilled (8-12ºC)

STORAGE: Store in a dry and cool place. Avoid direct sunlight.
