HIRAIZUMI Hiten KONJIKI
A sake created from a brand new variety of brewing rice developed in Akita prefecture with a richly aromatic yeast (Kyokai 1801), which gives it a round but delicate taste with a sophisticated aroma. The yamahai method (a traditional way of producing the fermentation starter using ambient lactic acid bacilli) adds a distinct yet balanced acidity.

COLOUR: Clear pale lemon green
OUR TASTING NOTES: Pronounced aroma of candied pineapple, dried strawberry, and aniseed. On the palate, it has a velvety texture with pure fruity characteristics and a cleansing finish.
FOOD PAIRING: Caprese salad; ikura (salmon roe) gunkan; steamed lobster with sweet chilli sauce.
SERVING SUGGESTIONS: Great as an aperitif, serve well chilled (4-8 ºC)
