This sake was made in 1712, reproducing the production methods of the Edo period. The rice polishing ratio is 88%, which is considered to be the limit of rice polishing technology of the time. Although super sweet, the rich sweetness is quickly cut off and does not linger, thanks to three times the acidity and five to seven times the amino acid content of the ginjo type. It is a sake version of dessert wine, perfect as an aperitif.
