A carefully brewed junmai daiginjo, handmade in small batches (kojikomi). The rice is soaked for an extremely precise amount of time, calculated to the second (gentei kyusui). The result is a sake that never bores, and the best representative of the Hitokiwa series, which proposes a refined version of Chiyomusubi’s typical features: intense umami, balanced taste, clean finish.

COLOUR: Clear pale lemon green

OUR TASTING NOTES: Poached pear, vanilla custard and candied ginger on the nose. Dried apricots, white chocolate, almonds, and kinako powder on the palate. Dry and tingling finish with sandalwood notes.

FOOD PAIRING: Kuri kinton (chestnuts and mashed sweet potato dish); pumpkin croquettes; butternut squash soup.

SERVING SUGGESTIONS: Serve chilled (8-12 ºC)

STORAGE: Store in a dry and cool place. Avoid direct sunlight.

We currently ship only within the UK.

For UK delivery, it will usually take up to 2 - 5 working days to be delivered to your address after receiving the order confirmation (It will take up to 3 - 17 working days to be delivered to Isle of Man and Jersey).

Orders will be shipped via DHL with a tracked service. DHL will send a notification email once there are updates with your order.
