Kaoruyama
An experimental bottle from the Odayaka brand. This sake is inspired by the words of the eleventh-century poet Tachibana no Tamenaka, who was impressed by the exquisite fragrance of the wild cherry blossoms of Haga, nestled in the mountains of Fukushima. Kaoruyama tastes similar to a white wine made from organic rice, and can be enjoyed by anyone, including those who have never drunk sake before. It has a specific tartness given by the use of white koji (normally used for shochu making) and yeasts that produce high acidity. Moreover, the maturation in oak barrels previously used for red wine gives it a delicate pale rose colour and adds tasting notes of rosé wine.

OUR TASTING NOTES: Sweet and complex aromas of candied cherry, blueberry jam, yoghurt sweets and apricot kernel pudding (annin-dofu). It is a uniquely sweet yet balanced sake with a pronounced acidity and a complexity added from the red wine barrel.
FOOD PAIRING: Aged cheese and fig compote; chocolate board; duck liver pate.
SERVING SUGGESTIONS: Serve chilled (8-12 ºC)
STORAGE: Store in a dry and cool place. Avoid direct sunlight.
