An experimental sake that uses the newly discovered Nagano R yeast, which creates high levels of malic acid, and that has a lower ABV even if undiluted. It has plenty of fruity notes, a subtle sweetness and a flavour with the perfect level of acidity–all features that make this sake a great companion for celebrations as well as for food pairings.
