    Most sake is pasteurised twice (once after the brewing process is completed and once at the bottling step), but namazake is not pasteurised at any point. The taste is generally fresher, more zingy and nutty than pasteurised sake, but the level of “rawness” can vary a great deal. Namazake requires refrigeration.
