REVIVE from NINJA (ABV 43%)

An Ethical Spirits & Co.'s gin made from sake that was never used due to the effects of the COVID-19 pandemic (NINJA, brewed by Seko Shuzo in Shiga prefecture) that has been turned into gin, combined with Japanese botanicals. 

On the nose, the greenness of sudachi (Japanese citrus fruit) and sencha green tea unites with myoga (Japanese ginger) as in a traditional dish. A sweeter aroma joins with camomile and kobokucha (tea made from tea tree trunk) notes. On the palate, a distinct umami is something never seen before in a gin. A bitter and unique Japanese seasoning taste of myoga also peeks through.
