Shizenshu Melon 3.33
An organic junmai sake brewed using the “fourth-stage mashing” (yodan-jikomi) technique, which involves adding an extra fourth batch of rice to the main mash during the brewing process. This technique usually imparts the sake a highly sweet flavour, but Niida Honke only used ⅓ (hence the 3.33 in the name) of the amount of rice for the final addition. This means that in this bottle the sweetness is much more restrained and the sake has a charming, fully-matured melon aroma but the flavour is perfectly balanced with a nice acidity.

COLOUR: Clear water white
OUR TASTING NOTES: Pronounced aroma with layers of melon jam, earthy notes of wet forest floor, a distinct minerality and cream cheese. Complex palate with melon, and pear fruitiness joined by mouth coating creaminess (kinako latte) and sharp acidity.
FOOD PAIRING: Swede, leek and potato gratin; summer rolls; kinpira gobo (marinated burdock and carrots).
SERVING SUGGESTIONS: Serve well chilled (4-8 ºC)
