Shizenshu Nigori

Shizenshu Nigori
A pure nigori (“cloudy sake”) from the Shizenshu (“natural sake”) brand, made with organic rice, additive-free yeast, and using the traditional kimotozukuri (or kimoto) method for the fermentation starter. This sake was brewed like the old days, mashing the fermenting mass (moromi) with a stone mortar. On the palate, the large quantity of sediments give it an intense koji aroma, a rich taste, and a smooth texture that feels like freshly fallen snow. In the aftertaste, there is a hint of the acidity typical of the kimotozukuri.

OUR TASTING NOTES: Delicately sweet aromas of rice pudding, banana and Greek yoghurt. Even more savoury on the palate, with a thick and rich texture of rice cream and a drying spicy finish.
FOOD PAIRING: Buffalo wings; spicy biryani.
SERVING SUGGESTIONS: Slowly turn the bottle upside down a few times until the sediments are mixed evenly. Serve well chilled (4-8 ºC); enjoy with ice or mixed with tonic water.
