It took Tamaasahi Brewery 10 years to master the technique used to brew this sake, called "shubo shibori": the extraction of the sake (from the sake lees) happens all at once after the fermentation starter is added to the main mash of rice, koji, and water. This process results in unique umami, sweetness, and acidity that are stressed further in this special release for MIRAI SAKE.

OUR TASTING NOTES: Unique aromas of toasted mochi, roasted popcorn and sour cream. Higher level of sweetness and acidity on the palate, with honey, apple vinegar, toasted rice cracker notes.
FOOD PAIRING: Calamari with sweet chilli sauce; Vietnamese pancake (Banh xeo); cheese board; baba ganoush. The brewers recommend pairing it with fish, shellfish, tomatoes, and cheese.
