It took Tamaasahi Brewery 10 years to master the technique used to brew this sake, called "shubo shibori": the extraction of the sake (from the sake lees) happens all at once after the fermentation starter is added to the main mash of rice, koji, and water. This process results in unique sweetness and acidity. It is reminiscent of a wine, and it’s the perfect drink for sake beginners!


TYPE: Junmai ginjo unpasteurised (nama) undiluted sake (genshu)

COLOUR: Pale lemon

OUR TASTING NOTES: Complex nose with honey roasted nuts, brioche, Granny Smith apples and Japanese cedar. Creamy texture with flavours of tangy lemon curd and longan fruits.

FOOD PAIRING: Fish and chips; ajifurai (fried horse mackerel); deep fried vegetable gyoza.

SERVING SUGGESTIONS: Serve well chilled (4-8ºC)

We currently ship only within the UK.

For UK delivery, it will usually take up to 2 - 5 working days to be delivered to your address after receiving the order confirmation (It will take up to 3 - 17 working days to be delivered to Isle of Man and Jersey).

Orders will be shipped via Royal Mail with a tracked service. They will send a notification email once there are updates with your order.
