A junmai that has been brewed with three times the amount of koji normally used, and bottled as it is without adding any further water.
For this bottle, the brewers used a combination of yellow and white koji, which gives the sake distinct fruit-like acidity and minerality. A sake in which rice umaminess and a refreshing acidity are perfectly balanced and complemented with a clean finish.

OUR TASTING NOTES: Rich aromas of caramelised walnuts, sweet soy sauce, caramelised onions, Worcestershire sauce, maple syrup. More caramel and coffee & walnut cake on the palate, complemented by pomegranate molasses acidity, chocolate, tobacco, and a finish with more coffee notes.
FOOD PAIRING: Unagi no kabayaki (grilled eel); sabich (fried aubergine sandwich with tahini sauce); lamb kofta.
SERVING SUGGESTIONS: Serve chilled (8-12 ºC), with ice, or gently warmed up (35-40ºC)
