A junmai that has been brewed with three times the amount of koji normally used, bottled as it is without adding any further water (genshu). Its flavour is characterised by an exquisite balance between the depth of koji umami and a refreshing tartness. The nose is welcomed by a well-rounded aroma, while the sweetness of the taste that spreads around the palate reminds of that of fried onions. When paired with food, it feels like adding umami notes to the dish.

COLOUR: Clear pale lemon
OUR TASTING NOTES: Rich fragrance of caramel, soy sauce, baked pineapple, caramelised onion and raisins. It has a creamy texture with the luscious sweetness of roasted peach and a savoury finish.
FOOD PAIRING: Sea urchins; kakuni pork; anmitsu (traditional dessert of agar agar jelly, sweet red bean paste, fruits, and black sugar).
SERVING SUGGESTIONS: Serve chilled (8-12 ºC)

For UK delivery, it will usually take up to 2 - 5 working days to be delivered to your address after receiving the order confirmation (It will take up to 3 - 17 working days to be delivered to Isle of Man and Jersey).
