A junmai that has been brewed with three times the amount of koji normally used, bottled as it is without adding any further water (genshu). Its flavour is characterised by an exquisite balance between the depth of koji umami and a refreshing tartness. The nose is welcomed by a well-rounded aroma, while the sweetness of the taste that spreads around the palate reminds of that of fried onions. When paired with food, it feels like adding umami notes to the dish.
