A junmai that has been brewed with three times the amount of koji normally used, and bottled as it is without adding any further water (genshu). Red rice has been mixed with the white Menkoina variety. A further layer of fruitiness is given by the addition of white koji to the usually used yellow koji. After an initial sharp hint of bitterness, a fruity sweetness and a deep umami (given by the red rice) jump in from the back of the palate. 

TYPE: Junmai undiluted sake (genshu)

COLOUR: Clear pale orange with a slight tint of pink

OUR TASTING NOTES: Fresh mushroom, sweet soy sauce, grilled pear, raisins on the nose. Distinctive acidity with sweet pineapple and caramelised onions and soy sauce on the palate. 

FOOD PAIRING: Peach cake with miso caramel; tandoori chicken; nizakana (simmered fish). The brewers recommend pairing it with miso or yoghurt.

SERVING SUGGESTIONS: Serve chilled (8-12 ºC)

STORAGE: Store in a dry and cool place. Avoid direct sunlight.

For UK delivery, it will usually take up to 2 - 5 working days to be delivered to your address after receiving the order confirmation (It will take up to 3 - 17 working days to be delivered to Isle of Man and Jersey).

Orders will be shipped via DHL with a tracked service. DHL will send a notification email once there are updates with your order.
