One of the three bottles from the “Traditional Colours of Japan” series.
This kimoto junmai daiginjo used Yamadanishiki rice from Akitsu (Hyogo prefecture), considered the most renowned area for this specific rice variety. The solid flavour of this sake perfectly showcases the features of Yamadanishiki. Kikujin (“koji dust green”) is a shade of green that in the past could be worn only by the imperial family. Mitobe brewery took inspiration from the fact that such a prestigious colour was so closely related to sake making, to pay respect to the Akitsu area.

COLOUR: Clear pale lemon green
OUR TASTING NOTES: Soft fragrance that combines fruits (star fruits, pear), sea breeze and mascarpone sweet cream. This sake has great acidity with green fruits and konbu umami-ness, followed by malted biscuits and a long and multi-layered finish.
FOOD PAIRING: Tai no kombu-shime (kelp marinated sea bream sashimi); white asparagus; duck prosciutto.
SERVING SUGGESTIONS: Serve chilled (8-12 ºC)
