Yamagata Masamune Malola
An experimental and unique sake, designed to pair well with high quality artisanal Parma ham—the brewery is also the official agent of the Italian Tanara ham producers. This is the first sake in the world to be brewed using malolactic fermentation (MLF), which is used in winemaking. MLF is a fermentation method in which malic acid is converted into lactic acid. This gives the sake a smooth and mellow taste. Warming it up brings out a subtle acidity and spiciness that evoke the notes of a cosy mulled cider.
TYPE: Junmai ginjo sake
COLOUR: Clear pale lemon green
OUR TASTING NOTES: Chardonnay-like creamy and oaky aroma, with notes of green apple. On the palate, a mellow and well-rounded texture with a distinctive acidity of apples and green pears.
FOOD PAIRING: Pan-fried scallops with butter sauce; soft cheese; Parma ham with mozzarella. The brewers recommend pairing it with both Western and Japanese dishes, and even with desserts.
SERVING SUGGESTIONS: Enjoy chilled (8-12 ºC) or gently warmed up (35-40 ºC)
