Azumatsuru aims at producing “a sake from which the brewers’ faces shine through”. The brewery employs at the same time old tools that have been there since previous generations and up-to-date utensils. Azumatsuru sources its water from an underground stream running from the mountains that surround the town of Taku, where the brewery is based.
