Yamagata Masamune derives its name from its rich rice flavor and sharpness like the famous sword Masamune.
The main ingredients are excellent sake rice from Yamagata Prefecture, but the best quality rice from other prefectures is also used, such as "Yamadanishiki" from Hyogo Prefecture and "Omachi" from Okayama Prefecture.

Mitobe sake is known as “the aftertaste cutting sword”, because of its specific sharp finish given by the use of the underground water collected from the Ou mountains, particularly hard in nature. The brewery’s motto is “sake-making starts from rice-growing”, which is why they are using almost uniquely rice grown by Mitobe’s own farming corporation.
