Tamaasahi sake is carefully hand-crafted in small batches, and all the products of their line-up are specifically designed with their own rice varieties and yeast strains. Among the latter, there are also some yeasts developed by the brewers themselves, which have been created from flowers growing in the high mountains nearby and from tulips’ pollen. They also use only natural soft water sourced from the underground deriving from the Joganji River. All these elements contribute in fulfilling Tamaasahi’s motto to produce a sake that lingers in your memory.
