This is the oldest brewery in the Northern-Eastern part of Japan, and the second oldest brewery surviving in the country. The name “Hiraizumi”, which is also that of their main brand, combines the names of the the town where the brewery currently is, Hirasawa, and that of its original name, Izumiya, which was originally in the Western part of Japan, near Osaka. The brewers commit to the yamahai technique, a way of making sake that is (at least partially) facilitated by the accessibility to hard water from an underground river flowing from Mount Chokai.
