The challenge launched (and accepted) by Niida Honke is to produce sake that can be sustainable and preserve the natural landscape and rice fields of Japan, under the guiding principle of “a sake that is safe to drink is a sake that treasures the life of rice”. They make use of organic rice farmed without any fertilisers or pesticides, and of natural water which is a mix of soft mountain spring water and hard well water.
